Catering Students Making Something Tasty: Jollof Rice
On April 17, 2023, our catering students made one of Liberia’s many tasting dishes--Jollof Rice. This one-pot dish is popular among West African countries, and they hold competitions to see who has the best. You can find them on YouTube, and they are fun to watch.
The students bought the ingredients like onions, African peppers, sausages, tomato paste, and mixed vegetables. This dish is served with fried chicken. Then they had to grind the pepper in the mortar and prep the other ingredients. Next, they cook the rice and fry the chicken on a coal-burning device called a coal pot.
Our students made the Jollof Rice and fried chicken and sold that to some of our students and customers off the street. If you haven't tried any Liberian food yet, I can say Jollof Rice is one my favorites.
